These crispy potato skins are an easy and delicious appetizer, perfect for game day or any gathering. Loaded with cheese, bacon, and topped with sour cream and green onions, they're sure to be a crowd-pleaser!

  • 4 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked and crumbled turkey bacon
  • 0.25 cup sour cream
  • 2 tablespoons chopped green onions

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, until soft.
  5. Cool slightly, then cut in half lengthwise.
  6. Scoop out most of the potato flesh, leaving 1/4 inch.
  7. Place potato skins on a baking sheet.
  8. Sprinkle with cheddar cheese and turkey bacon.
  9. Bake for 5-10 minutes, until cheese is melted.
  10. Top with sour cream and green onions.
  11. Serve immediately.

Notes

For extra crispy skins, broil for the last minute or two, watching carefully to prevent burning.
