  • 1 corned beef brisket 3-4 pound, with spice packet
  • 1 large onion quartered
  • 4 carrots peeled and cut into 1-inch pieces
  • 4 potatoes peeled and quartered
  • 1 head cabbage cored and cut into wedges
  • 6 cups water or beef broth
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • 1 tablespoon Dijon mustard Optional
  • Chopped fresh parsley Optional, for garnish

Method
 

  1. Rinse the corned beef brisket under cold water.
  2. Place the corned beef in a large pot or Dutch oven. Add the spice packet.
  3. Add the onion, carrots, and potatoes to the pot.
  4. Pour in the water or beef broth. Ensure the corned beef is mostly covered. Add more liquid if needed.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 3 hours, or until the corned beef is very tender.
  6. Add the cabbage wedges to the pot. Cover and cook for another 30 minutes, or until the cabbage is tender-crisp.
  7. Remove the corned beef from the pot and let it rest for 10-15 minutes before slicing against the grain.
  8. While the corned beef rests, taste the broth and adjust seasoning with salt and pepper as needed. Stir in Dijon mustard, if using.
  9. Slice the corned beef and serve with the vegetables and broth. Garnish with fresh parsley, if desired.

Notes

For a richer flavor, use beef broth instead of water. Adjust cooking time based on the size of the corned beef brisket.
