  • 1 pound ground beef
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 15 ounce kidney beans rinsed and drained
  • 15 ounce pinto beans rinsed and drained
  • 15 ounce corn drained
  • 10 ounce diced tomatoes and green chilies undrained
  • 1 ounce taco seasoning
  • 10.75 ounce condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup crushed tortilla chips

Method
 

  1. Brown ground beef in a skillet; drain excess grease.
  2. In a slow cooker, combine browned ground beef, onion, green bell pepper, kidney beans, pinto beans, corn, diced tomatoes and green chilies, taco seasoning, and cream of mushroom soup.
  3. Stir well to combine.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Stir in cheddar cheese and crushed tortilla chips before serving.

Notes

For a spicier casserole, use a hot taco seasoning or add a pinch of cayenne pepper.
