Banana Bread Chocolate Chip Cookies

Ingredients
  

Dried ingredients
  • 1 piece ripe banana (mashed)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • optional: 1/2 cup chopped walnuts or pecans if using

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add mashed banana, egg, and vanilla; mix well.
  4. Mix dry ingredients and combine with wet mixture.
  5. Fold in chocolate chips (and nuts if using). Drop spoonfuls onto baking sheet.
  6. Bake for 10-12 minutes; cool before serving.

Notes

For softer cookies, slightly underbake and let cool on the sheet.
