Method
- Preheat oven to 325°F (165°C). Grease and flour two loaf pans.
- Beat eggs until frothy. Add sugars, zucchini, oil, bananas, and vanilla; mix well.
- Stir in flour, cinnamon, baking powder, baking soda, and salt. Fold in cranberries and walnuts if desired.
- Divide batter into pans. Bake for 45-50 minutes until a toothpick comes out clean.
- Cool in pans, then remove and serve once cooled.
Notes
For extra flavor, add a sprinkle of cinnamon on top before baking.
