  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup mashed ripe banana about 2.5 medium bananas
  • 1 cup all-purpose flour
  • 1/2 cup old fashioned oats (blended into powder)
  • 1 teaspoon baking soda
  • 1.5 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • 1/4 teaspoon cinnamon (optional)
  • 1/8 teaspoon nutmeg (optional)
  • 1/8 teaspoon cloves (optional)
  • 1/2 to 3/4 cup toasted pecans or walnuts (optional)

Method
 

  1. Preheat oven to 350°F and prepare a loaf pan. Toast nuts if using, then set aside.
  2. Cream butter and sugars, then add eggs and vanilla. Mash bananas and add to mixture.
  3. Mix in flour, blended oats, baking soda, baking powder, salt, and optional spices. Fold in sour cream and nuts if desired.
  4. Pour batter into pan and bake for 55-65 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Store at room temperature for up to 2 days or freeze for longer storage.
