Method
- Preheat oven to 350°F and prepare a loaf pan. Toast nuts if using, then set aside.
- Cream butter and sugars, then add eggs and vanilla. Mash bananas and add to mixture.
- Mix in flour, blended oats, baking soda, baking powder, salt, and optional spices. Fold in sour cream and nuts if desired.
- Pour batter into pan and bake for 55-65 minutes until a toothpick comes out clean. Cool before slicing.
Notes
Store at room temperature for up to 2 days or freeze for longer storage.
