Pumpkin
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, sugars, oil, eggs, and vanilla until smooth.
  3. Whisk dry ingredients together, then combine with wet mixture.
  4. Fold in nuts if using, pour into pan, and bake 60-70 minutes.
  5. Cool in pan 10 minutes, then transfer to wire rack.
