Ingredients
  

Protein
  • 1 lb diced chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste Salt and pepper
  • 2 tbsp honey
  • ¼ cup sugar-free BBQ sauce (or regular if preferred)
Pasta
  • 2 cups elbow pasta (or any pasta of your choice)
  • 1 cup fat-free evaporated milk
  • 4 oz reduced-fat cream cheese
  • 1 tsp chicken stock powder
  • 1 ½ cups shredded light cheddar cheese

Method
 

  1. Coat chicken with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Cook in a pan for 4 minutes per side until golden.
  2. Drizzle honey and BBQ sauce over cooked chicken and stir to combine.
  3. Cook pasta in salted boiling water until al dente, then drain.
  4. In the same pan, heat evaporated milk and cream cheese until smooth, then add chicken stock powder and stir until creamy.
  5. Stir in shredded cheddar until melted, then fold in cooked pasta. Add BBQ chicken and mix gently.

Notes

This dish is perfect for meal prep and can be garnished with fresh herbs like parsley or chives for added flavor.
