Ingredients
  

Vegetables
  • 1 large head cauliflower, cut into florets
  • 2 cups cooked shredded chicken
Cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
Cream and Dairy
  • ¾ cup heavy cream
  • 2 oz cream cheese
Aromatics
  • 1 clove garlic, minced
Other
  • Salt and pepper to taste Salt and pepper to taste
  • 2 tbsp butter
  • ¼ cup crushed beef rinds or almond flour (for topping)

Method
 

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch dish.
  2. Steam or microwave cauliflower until tender, then drain.
  3. Melt butter, add garlic, then stir in cream and cream cheese until smooth. Mix in mozzarella and half Parmesan.
  4. Combine cauliflower and chicken with sauce, spread in dish, top with remaining Parmesan and crushed rinds.
  5. Bake for 20–25 minutes until golden and bubbly. Serve warm.

Notes

For extra crunch, use crushed beef rinds or almond flour on top.
