Ingredients
  

Pasta
  • 12 oz ziti pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 diced bell pepper
  • 1 diced zucchini
  • 1 cups mushrooms, sliced
  • 1 jar (24 oz) marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Garnish
  • optional Fresh basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta until al dente, drain, and set aside.
  3. Sauté onion and garlic in olive oil until softened.
  4. Add vegetables, cook until tender, then stir in marinara, basil, oregano, salt, and pepper.
  5. Mix pasta, sauce, and ricotta; transfer to a greased dish. Top with cheeses.
  6. Bake covered 25 mins, uncover and bake 15 mins until bubbly. Garnish and serve.

Notes

Use fresh basil for extra flavor and garnish before serving.
