  • 1 cup fresh cranberries
  • 1/2 cup sugar
  • 1/2 cup orange juice
  • 1 tablespoon orange zest
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook cranberries, sugar, orange juice, and zest until thickened, about 10 minutes.
  3. Whisk eggs and salt, then gradually add warm cranberry mixture.
  4. Cook mixture over low heat until thickened, then stir in butter.
  5. Pour into tart shell and bake for 15-20 minutes until set. Cool and refrigerate before serving.

Notes

Chill the tart for at least 2 hours for best flavor and texture.
