  • 2 lbs cooked chicken, shredded
  • 1 head cauliflower, cut into florets
  • 4 oz cream cheese, softened
  • 0.5 cup heavy cream
  • 0.5 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp butter
  • 0.5 tsp garlic powder
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower until tender. Drain and mash slightly.
  3. Combine cauliflower, cream cheese, cream, broth, garlic powder, salt, and pepper. Mix well.
  4. Stir in chicken and half of the cheddar cheese.
  5. Pour mixture into a greased baking dish.
  6. Top with remaining cheddar and Parmesan cheese.
  7. Dot with butter.
  8. Bake for 20-25 minutes, or until golden brown.

Notes

For a richer flavor, use a combination of cheddar and Monterey Jack cheese.
