Method
- Preheat oven to 375°F (190°C).
- Steam or boil cauliflower until tender. Drain and mash slightly.
- Combine cauliflower, cream cheese, cream, broth, garlic powder, salt, and pepper. Mix well.
- Stir in chicken and half of the cheddar cheese.
- Pour mixture into a greased baking dish.
- Top with remaining cheddar and Parmesan cheese.
- Dot with butter.
- Bake for 20-25 minutes, or until golden brown.
Notes
For a richer flavor, use a combination of cheddar and Monterey Jack cheese.
