- Preheat oven to 375°F (190°C). Cook pasta until al dente, drain and set aside.
- Cook onions in olive oil until translucent, add garlic and beef, cook until browned. Add marinara, tomatoes, seasonings, simmer 15-20 mins.
- Mix cooked pasta with meat sauce. In a bowl, combine ricotta, 2 cups mozzarella, and Parmesan.
- Layer half of pasta mixture in a greased baking dish, dollop with cheese mixture, then top with remaining pasta. Sprinkle remaining mozzarella on top.
- Bake uncovered for 25-30 mins until bubbly and golden. Rest 10-15 mins, garnish with parsley, serve with extra Parmesan.
Notes
Ensure pasta is slightly undercooked to prevent mushiness after baking.
