Ingredients
  

Pasta
  • 12 large shells Jumbo pasta shells uncooked
Dairy
  • 1 cup ricotta cheese Ricotta cheese
  • 1 cup mozzarella cheese Shredded mozzarella for topping
  • 1/2 cup parmesan cheese Grated Parmesan
Vegetables
  • 2 cups fresh spinach Chopped spinach fresh or frozen, drained
Other
  • 2 cloves garlic Minced garlic
  • 2 cups marinara sauce Marinara sauce
  • to taste Salt and pepper for seasoning

Method
 

  1. Cook the pasta shells in boiling water until al dente, then drain and set aside.
  2. In a bowl, mix ricotta, spinach, garlic, and half of the mozzarella and Parmesan cheeses.
  3. Stuff each shell with the spinach and cheese mixture and place in a baking dish.
  4. Pour marinara sauce over the stuffed shells and sprinkle with remaining mozzarella and Parmesan.
  5. Bake at 375°F (190°C) for 25-30 minutes until bubbly and golden.

Notes

You can use frozen spinach if fresh is unavailable; just be sure to drain excess moisture.
