Ingredients
  

Wet ingredients
  • 2 tablespoons milk
  • ¼ teaspoon white vinegar
Dry ingredients
  • 190 g plain flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • pinch salt
  • pinch ground cinnamon, optional
  • 100 g soft brown sugar
Bananas
  • 4 medium bananas (around 400g without peel)
Oils and flavorings
  • 120 ml olive oil or neutral oil
  • 1 teaspoon vanilla essence or extract

Method
 

  1. Preheat oven to 180°C (356°F). Line a loaf tin with parchment.
  2. Mix vinegar with milk and set aside. Mash bananas and combine with oil, vanilla, and milk.
  3. Mix dry ingredients in a bowl, then fold in wet ingredients until just combined.
  4. Pour batter into the tin and bake for 45-50 minutes until a skewer comes out clean.
  5. Cool in the tin for 5 minutes, then transfer to a wire rack. Store at room temperature or freeze.

Notes

You can add nuts or chocolate chips for extra flavor.
