Ingredients
  

Vegetables
  • 2 lbs butternut squash, peeled and cubed
  • 1 lb Brussels sprouts, trimmed and halved
Meat
  • 1 lb ground turkey or beef
Other ingredients
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp ground cinnamon
  • to taste Salt and pepper
  • 2 tbsp olive oil
  • 1 cup vegetable or chicken broth
Garnish
  • as needed Fresh parsley for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Toss vegetables with olive oil, salt, pepper, and cinnamon; roast for 25-30 minutes.
  2. Sauté onion and garlic in a skillet until translucent.
  3. Add ground meat; cook until browned. Season with thyme, salt, and pepper.
  4. Combine roasted vegetables with meat, add broth, and simmer for 5-10 minutes.
  5. Serve hot, garnished with fresh parsley.

Notes

Feel free to add a splash of lemon juice for extra brightness.
