Method
- Preheat oven to 375°F (190°C). Cook pasta until al dente, drain.
- Sauté onion and garlic in olive oil, add vegetables and cook until tender.
- Mix cooked pasta with vegetable sauce and ricotta cheese, transfer to baking dish.
- Top with mozzarella and Parmesan, bake covered 25 mins, then uncovered 15 mins.
- Garnish with basil, serve warm.
Notes
Feel free to add more herbs or cheese for extra flavor.
