Ingredients
  

Pasta
  • 12 oz ziti pasta
Vegetables and Oil
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 diced bell pepper
  • 1 diced zucchini
  • 1 cups mushrooms, sliced
Sauce and Herbs
  • 1 jar (24 oz) marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste Salt and pepper
Cheese
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Garnish
  • Fresh basil for garnish (optional) Fresh basil for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, drain.
  2. Sauté onion and garlic in olive oil, add vegetables and cook until tender.
  3. Mix cooked pasta with vegetable sauce and ricotta cheese, transfer to baking dish.
  4. Top with mozzarella and Parmesan, bake covered 25 mins, then uncovered 15 mins.
  5. Garnish with basil, serve warm.

Notes

Feel free to add more herbs or cheese for extra flavor.
