  • 1 whole turkey (12-14 pounds)
  • 1 cup unsalted butter, softened
  • 6 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 lemon halved
  • 4 cups chicken broth
  • 1 onion quartered
  • 2 carrots chopped
  • 2 celery stalks chopped

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Mix butter, garlic, herbs, salt, and pepper to make herb butter.
  3. Pat turkey dry, rub under skin and over outside with herb butter.
  4. Stuff cavity with lemon, onion, carrots, and celery. Tie legs and tuck wings.
  5. Pour broth into pan, roast turkey, basting every 30 minutes, until internal temp reaches 165°F (74°C).
  6. Rest turkey for 20-30 minutes before carving.

Notes

Use a meat thermometer to ensure proper doneness.
