- Preheat oven to 375°F (190°C). Mix bread, ricotta, mozzarella, Parmesan, basil, milk, sugar, eggs, and vanilla. Pour into a baking dish.
- Cover with foil and bake for 40 minutes. Uncover, sprinkle with cheese, and bake 10–15 minutes until golden.
- Meanwhile, prepare vanilla sauce by heating cream with sugar and vanilla until thickened. Serve warm over bread pudding.

Use day-old bread for best texture and flavor.
