Ingredients
  

for the cupcakes:
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
for the blood red filling:
  • 1 cup raspberry or strawberry jam
optional: fresh raspberries for garnish.
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan.
  2. Mix dry ingredients, then combine wet ingredients and fold into dry. Fill liners and bake for 18-20 minutes.
  3. Heat jam until liquid, core cupcakes, and fill with jam.
  4. Beat butter, gradually add powdered sugar, cream, vanilla, and food coloring to make frosting. Frost cupcakes and garnish with raspberries.

Ensure cupcakes are fully cooled before frosting to prevent melting.
