Ingredients
  

Meat
  • 1 lb turkey sausage, casing removed
Vegetables
  • 2 cups fresh spinach, chopped
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
Dairy & Eggs
  • 8 large eggs
  • 1 cup milk (or non-dairy alternative)
  • 1 cup shredded cheese (cheddar or your choice)
Seasonings & Oils
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
Oils & Sprays
  • as needed olive oil or cooking spray for greasing

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Sauté onion and bell pepper in olive oil until softened. Add turkey sausage and cook until browned. Stir in spinach until wilted.
  3. Whisk eggs, milk, garlic powder, paprika, salt, and pepper. Grease a 9x13 inch dish. Spread sausage mixture, pour egg mixture, and sprinkle cheese.
  4. Bake for 30-35 minutes until eggs are set and top is golden. Cool slightly before slicing.
