Method
- Preheat oven to 450°F (230°C).
- Remove backbone with kitchen shears, flip turkey, and press to flatten.
- Pat dry, rub with olive oil, and season with salt, pepper, garlic, onion, and paprika.
- Drizzle lemon juice over turkey, then place on a rack in a baking sheet.
- Roast for 1 to 1 hour 15 minutes until skin is golden and internal temp reaches 165°F (74°C). Rest for 20-30 minutes before carving.
