  • 1 whole turkey (10-12 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon smoked paprika
  • 1 lemon lemon, juiced

Method
 

  1. Preheat oven to 450°F (230°C).
  2. Remove backbone with kitchen shears, flip turkey, and press to flatten.
  3. Pat dry, rub with olive oil, and season with salt, pepper, garlic, onion, and paprika.
  4. Drizzle lemon juice over turkey, then place on a rack in a baking sheet.
  5. Roast for 1 to 1 hour 15 minutes until skin is golden and internal temp reaches 165°F (74°C). Rest for 20-30 minutes before carving.
