Ingredients
  

Wet Ingredients
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/4 cup water
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
Optional Nuts
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Mix pumpkin, sugars, oil, eggs, and water until combined.
  3. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  4. Gradually add dry ingredients to wet, stir until just combined. Fold in nuts if using.
  5. Pour batter into pan, bake 55-65 minutes. Cool before slicing.

Notes

For extra flavor, add a teaspoon of vanilla extract to the wet ingredients.
