Method
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- Mix pumpkin, sugars, oil, eggs, and water until combined.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Gradually add dry ingredients to wet, stir until just combined. Fold in nuts if using.
- Pour batter into pan, bake 55-65 minutes. Cool before slicing.
Notes
For extra flavor, add a teaspoon of vanilla extract to the wet ingredients.
