Method
- Preheat oven to 375°F (190°C).
- In a skillet, toast wild rice with olive oil for 2-3 minutes.
- Add broth, bring to boil, cover, and simmer 40-45 mins until tender.
- Stir in broccoli, soup, milk, seasonings, and 3/4 cup cheese.
- Top with remaining cheese and breadcrumbs, then bake 20-25 mins until bubbly.
- Let cool briefly, then serve warm.
Notes
For extra crunch, add more breadcrumbs or a sprinkle of Parmesan before baking.
