Ingredients
  

Grains
  • 1 cup wild rice
  • 2 cups vegetable broth
Vegetables
  • 2 cups broccoli florets
Dairy & Cheese
  • 1 cup shredded cheddar cheese
  • 1 cup cream of mushroom soup
  • 1/2 cup milk
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste Salt and pepper
Toppings
  • 1/2 cup breadcrumbs (optional for topping)
  • 2 tablespoons olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, toast wild rice with olive oil for 2-3 minutes.
  3. Add broth, bring to boil, cover, and simmer 40-45 mins until tender.
  4. Stir in broccoli, soup, milk, seasonings, and 3/4 cup cheese.
  5. Top with remaining cheese and breadcrumbs, then bake 20-25 mins until bubbly.
  6. Let cool briefly, then serve warm.

Notes

For extra crunch, add more breadcrumbs or a sprinkle of Parmesan before baking.
