Method
- Preheat oven to 400°F (200°C).
- Scrub potatoes and pierce with a fork.
- Rub potatoes with olive oil, salt, and pepper.
- Bake for 45-60 minutes, or until tender.
- Let potatoes cool, then cut in half.
- Scoop out most of the potato flesh, leaving a 1/4-inch border. Reserve the scooped potato.
- Cut each potato half into 3-4 bite-sized pieces.
- Place potato skin bites on a baking sheet.
- Sprinkle with cheddar cheese and turkey bacon.
- Bake for 5-10 minutes, or until cheese is melted.
- Top with sour cream and chives.
- Serve immediately.
Notes
For extra crispy potato skins, broil for the last 1-2 minutes of baking.
