  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled cooked turkey bacon
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh chives

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Scrub potatoes and pierce with a fork.
  3. Rub potatoes with olive oil, salt, and pepper.
  4. Bake for 45-60 minutes, or until tender.
  5. Let potatoes cool, then cut in half.
  6. Scoop out most of the potato flesh, leaving a 1/4-inch border. Reserve the scooped potato.
  7. Cut each potato half into 3-4 bite-sized pieces.
  8. Place potato skin bites on a baking sheet.
  9. Sprinkle with cheddar cheese and turkey bacon.
  10. Bake for 5-10 minutes, or until cheese is melted.
  11. Top with sour cream and chives.
  12. Serve immediately.

Notes

For extra crispy potato skins, broil for the last 1-2 minutes of baking.
