  • 1.5 cups almond flour not almond meal
  • 0.25 cup coconut flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp cinnamon optional
Wet ingredients
  • 2 large ripe bananas medium-sized, darker bananas preferred
  • 0.5 cup plain Greek yogurt or vanilla for extra sweetness
  • 0.33 cup monk fruit sweetener or erythritol adjust to taste
  • 1 tsp vanilla extract
Add-ins
  • 0.5 cup chopped walnuts or pecans
  • to taste none sugar-free chocolate chips
  • a sprinkle none oats

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas, then mix with eggs, Greek yogurt, sweetener, and vanilla.
  3. Whisk almond flour, coconut flour, baking soda, salt, and cinnamon in a bowl.
  4. Fold dry ingredients into wet mixture; add optional nuts, oats, or chocolate chips.
  5. Pour batter into pan, bake for 45–55 minutes, then cool before serving.
