Ingredients
  

Pasta
  • 12 oz ziti pasta
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 diced bell pepper
  • 1 diced zucchini
  • 1 cups mushrooms, sliced
  • 1 jar (24 oz) marinara sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
Fresh basil for garnish (optional)

Method
 

  1. Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
  2. Sauté onion and garlic in olive oil until softened. Add vegetables and cook until tender.
  3. Mix in marinara sauce, basil, oregano, salt, and pepper; heat through.
  4. Combine cooked pasta, vegetable sauce, and ricotta in a bowl. Transfer to a baking dish.
  5. Top with mozzarella and Parmesan, then bake covered for 25 minutes. Remove foil and bake 15 more minutes until bubbly.
  6. Let cool slightly, garnish with basil if desired, and serve warm.

Notes

For a richer flavor, add a pinch of red pepper flakes or fresh herbs.
