Method
- Preheat oven to 375°F (190°C). Cook pasta until al dente, then drain.
- Sauté onion and garlic in olive oil until softened. Add vegetables and cook until tender.
- Mix in marinara sauce, basil, oregano, salt, and pepper; heat through.
- Combine cooked pasta, vegetable sauce, and ricotta in a bowl. Transfer to a baking dish.
- Top with mozzarella and Parmesan, then bake covered for 25 minutes. Remove foil and bake 15 more minutes until bubbly.
- Let cool slightly, garnish with basil if desired, and serve warm.
Notes
For a richer flavor, add a pinch of red pepper flakes or fresh herbs.
