  • 1.5 lbs chicken breast cut into tender-sized strips, about 1-inch wide and 3-4 inches long
  • 2 tablespoons olive oil extra virgin recommended
  • 2 tablespoons lemon juice fresh, about 1 lemon
  • 2 cloves garlic minced finely
  • 1 teaspoon dried oregano Greek oregano preferred
  • 1 teaspoon dried basil
  • 0.5 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup feta cheese crumbled, block feta recommended
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Combine olive oil, lemon juice, garlic, oregano, basil, paprika, salt, and pepper in a bowl. Whisk until blended.
  2. Add chicken to marinade, toss to coat. Marinate for 15 minutes at room temperature or refrigerate up to overnight.
  3. Preheat oven to 400°F (200°C). Arrange chicken on a parchment-lined baking sheet in a single layer.
  4. Bake for 15-20 minutes until chicken reaches 165°F and edges are golden brown.
  5. Remove from oven, sprinkle with feta and parsley. Let rest for 2-3 minutes.

Notes

For best results, marinate the chicken overnight to allow the flavors to fully penetrate.
