Ingredients
  

Salad
  • 1 cup cooked quinoa
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped tomatoes
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Kalamata olives, halved
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Grilled chicken or chickpeas Optional: for added protein

Method
 

  1. Combine quinoa, cucumber, tomatoes, feta, and olives in a bowl.
  2. Whisk olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
  3. Pour dressing over quinoa mixture and toss gently.
  4. Add grilled chicken or chickpeas if desired.
  5. Serve immediately or chill for later.

Notes

For a vegan option, omit the feta cheese or substitute with a plant-based alternative.
