- Preheat oven to 375°F (190°C). Cook pasta until al dente, drain, and set aside.
- Cook onions in olive oil until translucent, add garlic and beef, cook until browned. Add marinara, tomatoes, and seasonings, simmer 15-20 mins.
- Mix ricotta, 2 cups mozzarella, and Parmesan to make cheese layer.
- Layer half of pasta with sauce in baking dish, dollop with cheese mixture, then top with remaining pasta and sauce. Sprinkle remaining mozzarella on top.
- Bake uncovered 25-30 mins until bubbly and golden. Rest 10-15 mins, garnish with parsley, serve with extra Parmesan.
Notes
Ensure pasta is undercooked slightly to prevent mushiness. Resting the casserole helps it set for clean slices.
