Ingredients
  

Wet ingredients
  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix wet ingredients until combined, then add dry ingredients and fold in nuts if using.
  3. Pour batter into pan and smooth top.
  4. Bake for 60-70 minutes until a toothpick comes out clean.
  5. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a teaspoon of ginger or cloves.
