Ingredients
  

Meat and Dairy
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo pasta
  • 2 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • to taste Salt and pepper
Optional toppings
  • diced pickles, tomatoes, lettuce as desired

Method
 

  1. Brown ground beef in a skillet until cooked; drain excess fat.
  2. Add diced onion and minced garlic; sauté until translucent.
  3. Stir in orzo, beef broth, ketchup, mustard, salt, and pepper; bring to a boil.
  4. Reduce heat, cover, and simmer 10-12 minutes until orzo is tender and liquid absorbed.
  5. Remove from heat, stir in cheddar cheese until melted, then serve with optional toppings.

Notes

For extra flavor, add a dash of Worcestershire sauce or hot sauce.
