Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped almonds
  • 1/2 cup raspberry jam
  • additional powdered sugar for dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and powdered sugar until fluffy, then add vanilla and almond extracts.
  3. Mix in flour, salt, and chopped almonds to form dough.
  4. Shape dough into balls, flatten, add jam, and re-form into balls.
  5. Bake for 12-15 minutes until bottoms are golden, then cool and dust with powdered sugar.
