Ingredients
  

Dairy and Eggs
  • 1 1/4 cups plain yogurt
  • 2 large eggs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon white sugar
  • cayenne to taste cayenne pepper Add according to spice preference
Dry Ingredients
  • 1 cup self-rising flour
  • 2 tablespoons self-rising flour
  • 6 oz grated Cheddar cheese, divided
  • 2 tablespoons green onions, plus more for garnish
Pasta
  • 1 cup elbow macaroni
  • 1/4 cup melted butter, plus more for greasing
  • 1/4 cup reserved pasta water

Method
 

  1. Grease an 8-inch or 9-inch cake pan and line with parchment.
  2. Preheat oven to 425°F (220°C).
  3. Mix yogurt, eggs, salt, pepper, sugar, and cayenne. Add flour, 5 oz cheese, green onions, and combine.
  4. Cook pasta until tender, drain, reserving 1/4 cup water.
  5. Mix melted butter, pasta, and reserved water into batter. Pour into pan, top with remaining cheese and cayenne, then bake for 25 minutes.

Notes

For extra flavor, garnish with additional green onions before serving.
