Ingredients
  

Vegetables
  • 4 cups diced potatoes
  • 1 cup diced bell peppers
  • 1 cup diced onion
Dairy & Eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 6 large eggs eggs
  • 1 cup milk
Spices & Oils
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper Salt and pepper to taste
  • 2 tablespoons olive oil
Garnish
  • optional Fresh herbs for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Toss potatoes, peppers, onion, oil, garlic, paprika, salt, and pepper; roast 25-30 mins.
  2. Whisk eggs, milk, salt, and pepper. Transfer roasted vegetables to a greased dish.
  3. Pour egg mixture over vegetables, sprinkle cheese, and bake 25-30 mins until eggs are set and cheese bubbles.
  4. Let cool slightly, garnish with herbs if desired, then serve warm.

Notes

For extra flavor, add chopped fresh herbs before serving.
