  • 1 corned beef brisket 3-4 pound, with spice packet
  • 1 large onion quartered
  • 4 carrots peeled and cut into 2-inch pieces
  • 4 potatoes peeled and quartered
  • 1 head cabbage cored and cut into wedges
  • 4 cups beef broth
  • 1 tablespoon Dijon mustard optional
  • to taste Salt and pepper

Method
 

  1. Place onion, carrots, and potatoes in the slow cooker.
  2. Rinse corned beef and place on top of vegetables. Sprinkle with spice packet.
  3. Pour beef broth over corned beef and vegetables. Add more broth if needed to cover the meat.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until corned beef is tender.
  5. Add cabbage wedges during the last 2 hours of cooking.
  6. Remove corned beef and let it rest for 10-15 minutes before slicing against the grain.
  7. Stir Dijon mustard into the broth (optional). Season with salt and pepper.
  8. Serve sliced corned beef with cooked vegetables and broth.

Notes

For a richer flavor, sear the corned beef in a skillet before adding it to the slow cooker.
