Method
- Place onion, carrots, and potatoes in the slow cooker.
- Rinse corned beef and place on top of vegetables. Sprinkle with spice packet.
- Pour beef broth over corned beef and vegetables. Add more broth if needed to cover the meat.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until corned beef is tender.
- Add cabbage wedges during the last 2 hours of cooking.
- Remove corned beef and let it rest for 10-15 minutes before slicing against the grain.
- Stir Dijon mustard into the broth (optional). Season with salt and pepper.
- Serve sliced corned beef with cooked vegetables and broth.
Notes
For a richer flavor, sear the corned beef in a skillet before adding it to the slow cooker.
