Ingredients
  

Rice
  • 2 cups uncooked rice
Vegetables
  • 2 small heads broccoli (chopped)
Protein
  • 3 large chicken breasts
Sauces & Oils
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder (or cornstarch) mixed with 2 tbsp water to make slurry
  • 1/2 cup mayo
  • 1 tbsp sriracha (for mayo)
  • 2-3 tbsp water to thin mayo
Toppings
  • to taste sesame seeds for topping

Method
 

  1. Cook rice and set aside.
  2. Chop broccoli and set aside.
  3. Slice chicken, season, and cook in oil until golden.
  4. Steam or sauté broccoli until tender. Prepare sticky sauce and combine with chicken, simmer until thickened.
  5. Mix mayo, sriracha, and water to make spicy mayo. Assemble bowls with rice, chicken, broccoli, drizzle spicy mayo, and top with sesame seeds.
