Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1/2 cup marshmallows (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Boil sweet potatoes until tender, then mash.
  2. Mix mashed sweet potatoes with sugar, milk, melted butter, vanilla, cinnamon, nutmeg, and salt.
  3. Spread mixture in a greased 9x13 inch dish. Prepare pecan topping by mixing pecans, brown sugar, and melted butter.
  4. Sprinkle pecan topping over the sweet potato layer. Add marshmallows if desired.
  5. Bake for 25-30 minutes until golden. Let cool slightly before serving.

Notes

For extra crunch, toast the pecans before adding.
