Ingredients
  

Dough
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup coconut oil, solid
  • 1/4 cup almond milk
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
Royal Icing
  • 2 cups powdered sugar
  • 1/4 cup aquafaba (liquid from canned chickpeas)
  • 1 teaspoon lemon juice
Decorating
  • food coloring (optional) food coloring

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets.
  2. Mix dry ingredients; beat coconut oil and sugar until creamy.
  3. Add almond milk, vanilla, and almond extract; combine.
  4. Form dough, chill for 30 minutes, then roll and cut shapes.
  5. Bake 8-10 minutes; cool completely. Whisk powdered sugar, aquafaba, and lemon juice for icing. Decorate cookies.
