Method
- Preheat oven to 350°F (175°C) and grease mini loaf pan.
- Mix pumpkin, oil, sugars, and eggs until combined.
- Whisk dry ingredients; add to wet mixture, mix just until combined.
- Combine sugar and cinnamon for swirl; layer batter and sprinkle cinnamon sugar, then swirl gently.
- Bake 25-30 minutes; cool before serving.
Notes
For extra flavor, sprinkle nuts on top before baking.
