Ingredients
  

Pumpkin and Wet Ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
Dry Ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
Cinnamon Swirl
  • 1/4 cup sugar
  • 1 tablespoon ground cinnamon
Optional Nuts
  • 1/4 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease mini loaf pan.
  2. Mix pumpkin, oil, sugars, and eggs until combined.
  3. Whisk dry ingredients; add to wet mixture, mix just until combined.
  4. Combine sugar and cinnamon for swirl; layer batter and sprinkle cinnamon sugar, then swirl gently.
  5. Bake 25-30 minutes; cool before serving.

Notes

For extra flavor, sprinkle nuts on top before baking.
