Ingredients
  

Oil
  • 1 tablespoon oil see recipe notes
Vegetables and spices
  • 1 medium head of broccoli cut into small florets
  • 1/3 cup vegetable broth
  • 1 can (15 oz) chickpeas rinsed and drained
  • 1 medium onion diced
  • 5 cloves garlic minced
  • 1 heaped tablespoon fresh ginger minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon smoked paprika
  • to taste black pepper & sea salt
  • pinch cayenne pepper
Sauce ingredients
  • 1/2 cup water
  • 3 tablespoons soy sauce gluten-free if needed
  • 2 tablespoons rice vinegar or balsamic vinegar
  • 2 tablespoons maple syrup or other sweetener
  • 1 tablespoon cornstarch

Method
 

  1. Heat oil in a pan over medium heat. Add onion, ginger, garlic, and spices; sauté 3-4 minutes.
  2. Add broccoli and broth; cook until tender, about 10 minutes.
  3. Mix water, soy, vinegar, syrup, and cornstarch; pour into pan with chickpeas. Simmer until thickened.
  4. Adjust seasonings, then serve with rice if desired.
